Toasty and caramelized creamy white chocolate with fresh crunchy raisiny grapey nutty notes in the unrefined nibs*. Yes, this bar is expensive due to the cost of ingredients and insane amount of labor. Imagine winnowing with tweezers. Four rounds after the main winnowing. Yep. Love ya.
*A note on the nibs: freshly roasted cacao bean (seed) that has been cracked and winnowed. Sans the husk, this is the entire seed; the broken pieces of nib include the radicle which tends to be harder than the rest of the embryo. Just sayin'.
